Cajun Grilled Shrimp

Shrimp is one of my favorite things to cook. Not only do they have a wonderful flavor but they also cook in an incredibly short amount of time. I usually spend more time prepping them than I do actually cooking them and this recipe is no different. Peeling, deveining and skewering the shrimp will take more time than they will spend on the grill. As always, try to buy American shrimp or if you can’t, get them from a country that requires sustainable and healthy farming practices.

Cajun Grilled Shrimp

2 lbs large shrimp, peeled and deveined

Olive oil

1 tsp kosher salt
1/2 tsp paprika
1/2 tsp dried thyme
1/4 tsp black pepper
1/4 tsp white pepper
1/4 tsp cayenne pepper

If using bamboo skewers, soak them in water for 1 hour.

Combine all the spices in a small bowl. Skewer each shrimp, making sure to pierce each one twice so that they will not spin around the skewer as you try to flip them. Spray or coat both sides of the shrimp with olive oil then dust each side with the spice mixture.

Grill the shrimp over direct high heat for 4 minutes turning once half way. Do not overcook.

Wanted to share my Great Aunt Minis Honey Lemonade Recipe: 1/2 gallon warm water, 1/2 cup honey, 1/4 cup sugar, 1/2 cup fresh lemon juice. Just mix it all with your hands (their warmth will disolve the honey and sugar) and pour mixture into a gallon container filled 3/4 with ice. I like to use wild honey from the local food coop...it has a unique spicey flavor.
