The Fearrington House/Sparkman Cellars Wine Dinner

mr_cocktail Two weeks ago, Ms Cocktail and I set out on a journey to visit one of my Huddle buddies, Chef Charlie Deal. Charlie owns two restaurants in North Carolina, Jujube in Chapel Hill and Dos Perros in Durham. Now Charlie and I have talked about many things at the Huddle, not the least of which is food. However, an opportunity presented itself where I could actually shake free from my regular schedule and head on down to finally meet this person.

Of course, things didn’t go quite as planned.

You see, normally Charlie has Sunday’s free and the idea was that I would head on down to visit on a Sunday and we could sit and chat about all things Huddle and non-Huddle and split a bottle or two of wine and generally bond over food and wine and stuff. However, it came to be that Charlie had a thing going that Sunday. He was to be a guest chef at the Fearrington House for a special wine dinner they were having there. This is kind of a big deal because the Fearrington House is a five star inn and restaurant located just outside of Chapel Hill, NC.

There was more to this dinner than just inviting Charlie to be a guest chef though. It turns out that one of Charlie’s buddies from back in the day is Chris Sparkman, owner of Sparkman Cellars in Woodinville, WA. So a special wine dinner was put together at the Fearrington House where Charlie was to work with the resident chef, Colin Bedford on a dinner to be paired with five wines from Sparkman Cellars. There was still room for a couple more people at this dinner and it seemed like too good an opportunity to pass up, so Ms Cocktail and I made plans to head on down to join this once in a lifetime collaboration between the three entities.

Yes Chef

The truth of it is that balanced cooking techniques need to satisfy merely THREE basic and simple requirements the food you eat should not have extra amount of fat and sea salt i.e. should not be full of calories, it should retain their nutrients i.e. it shouldn\'t be empty calories above all, it should taste good.
